One correction to the old price bands on this page. Philips is the brand people ask for, but its current hand mixer is Rs 2,379, not the Rs 900 to Rs 1,500 this page used to suggest. Under Rs 500 you are buying unbranded 260 W units, and there are plenty of them.

Ise egg beater ya hand mixer kehte hain. Hindi mein "anda fentne wali machine". Haath wale whisk ko balloon whisk kehte hain, aur bijli wale ko electric egg beater. In English: the tool for beating eggs is called an egg beater or a hand mixer. The hand-powered version is a balloon whisk. The plug-in version is an electric egg beater.
What Can You Use an Electric Egg Beater For?
An electric egg beater is useful for far more than eggs. An electric egg beater whips egg whites into stiff peaks for cakes. An electric egg beater also whips fresh cream, mixes cake and pancake batter, and makes whipped coffee. It saves your arm on every one of these jobs.

The magic is air. Beating traps tiny air bubbles inside the food. Those bubbles make the mix light and fluffy.

How Do You Use the Speed Settings?
To use an electric egg beater well, match the speed to the job. Start on low so flour and liquid do not splash out. Move to high to whip air into eggs or cream. Then drop back to low at the end to make the mix smooth and even.
This simple order works for almost everything.
- Start on low — Combine your ingredients first so nothing flies out of the bowl.
- Move to medium — Let the mix come together into a smooth base.
- Go to high — Whip in air until the eggs or cream thicken.
- Watch for peaks — Stop when soft or stiff peaks form and hold.
- Finish on low — A few slow seconds even out the texture.
Does egg temperature matter? The two best sources on this disagree. Laura's Bake Lab advises you to "bring aged egg whites to room temperature before whisking", because it "reduces the surface tension and allows for more volume". Bon Appétit says the opposite: "Contrary to popular belief, egg whites don't need to be at room temperature to reach their full whipping potential … straight from the fridge is fine."
Bon Appétit adds a practical reason to use cold eggs. Cold eggs are firmer inside the shell, so the yolk is less likely to break while you separate them. With an electric beater the difference in volume is small either way, so separate them cold and do not wait.
Why Won't My Egg Whites Whip Up?
Egg whites usually fail to whip because of fat. Yolks are about 30% fat, so a broken yolk is the usual culprit, along with oil or soap left in the bowl. Use a clean, dry bowl and separate with care.
One correction worth making, because this page overstated it before. Bon Appétit says "small traces of yolk are fine though, so don't overthink this". A speck will not ruin your meringue. A splash of yolk will.
For insurance, add acid. Bon Appétit gives an exact dose: one eighth of a teaspoon of cream of tartar per egg white, added at the very start. Lemon juice and vinegar work but are weaker and less consistent.
Here is what is really going on. Beating unfolds the proteins in the egg white. Those proteins then wrap around each air bubble and hold it in place. Steady beating builds a firm, stable foam — Laura's Bake Lab.
Why fat ruins foam: Egg whites do not do well with fat of any kind. A trace can make them simply refuse to whip — Bon Appétit.
The acid trick: Acid stops the egg proteins bonding too tightly, which is what makes a foam collapse into bubbles and runny liquid. Cream of tartar is the classic choice — Bon Appétit.
Do not over-beat: Beat too long and the proteins squeeze together and push out water. The foam then turns grainy and separates — Bon Appétit.
So stop at glossy, stiff peaks. Lift the beaters and check. If a peak stands up and holds, you are done.
How Do You Clean an Electric Egg Beater?
To clean an electric egg beater, unplug it first. Press the eject button and pull out the two beaters. Wash the beaters in warm, soapy water like normal spoons. Wipe the motor body with a damp cloth, but never put the motor in water.
The rule is simple. The beaters get washed. The motor never gets wet.
Many beaters are dishwasher-safe on the top rack. Check the label first, though. Dry metal beaters well so they do not rust.
Clean the beaters straight after use. Dried batter and egg are much harder to scrub off later.
