Kuttu ka Atta vs Singhara, Rajgira and Samak: Navratri Fasting Flours Explained

Kuttu ka Atta, Singhara, Rajgira and Samak: What Each One Actually Is

Short answer: Kuttu ka atta is ground buckwheat seed. Rajgira is amaranth seed. Samak is barnyard millet. Singhara atta is not from a grain at all. It is ground from the dried fruit of a water plant.

All four are eaten in Navratri because none of them is wheat or rice. But they are four very different foods.

FSSAI, India's food regulator, lists them in its grain standards. Its millet list names buckwheat as kuttu and amaranth as rajgira or chaulai.

It names barnyard millet as samak ke chawal, sanwa or jhangora. In a later note, it calls kuttu and amaranth pseudo-millets. That means seeds we use like grains.

Singhara is not on either list. It is the water chestnut, Trapa natans, a plant that floats in ponds. A 2024 study in Foods notes it is farmed for its fruit in India, China and South-East Asia.

That last column is the whole point. You make a roti from kuttu, but you cook samak like rice. Pick the one that fits the dish.

Samak is also easy to mix up with little millet, called kutki. FSSAI lists them as two separate millets. Our list of every millet in India has the names in other languages.

Is Kuttu ka Atta Gluten-Free? Yes, With Two Warnings

Short answer: Buckwheat has no gluten, and neither does amaranth. That is why kuttu dough behaves so differently from wheat atta. But a shared mill can add wheat, and a small number of people are allergic to buckwheat.

A 2021 review in the journal Plants looked at buckwheat allergy. It notes that people with coeliac disease eat buckwheat, as it has no gluten. A 2024 review in Current Research in Food Science calls amaranth gluten-free too.

Warning 1: the mill

Much loose kuttu atta is ground in local mills. A mill that grinds wheat in the morning can leave wheat in the kuttu it grinds later.

For a fast, that may not matter to you. But if you avoid gluten for a medical reason, buy a sealed pack that says gluten-free on the label.

Warning 2: buckwheat allergy

The same review says buckwheat can cause a true allergy. In rare cases, the reaction is severe. It also found links with peanut, latex, coconut, quinoa and poppy seed allergy.

📊 In one survey in the review, 3.9% of 870 people in a Stockholm coeliac society said they had a buckwheat allergy. The authors say severe reactions to buckwheat are rare.

Do you have a peanut or latex allergy? Then eat only a little kuttu the first time. If your lips itch or you break out in hives, stop and see a doctor.

Why Kuttu Dough Cracks, and the Binder That Fixes It

Short answer: Wheat atta holds together because its gluten turns stretchy when you knead it. Kuttu, rajgira and singhara have none. So add a binder: about one boiled, mashed potato per cup of flour. Knead it in before you add any water.

Without gluten, the dough cannot stretch. Roll it thin and it tears at the edges. The potato's cooked starch acts like glue and holds the flour together.

Many homes use boiled arbi or raw banana in place of potato. The idea is the same.

Kuttu roti or puri dough, step by step

  1. Boil 1 medium potato, peel it and mash it while warm until there are no lumps.
  2. Mix it into 1 cup of kuttu ka atta with a pinch of sendha namak.
  3. Knead first with no water. The potato alone may be enough.
  4. Add warm water one spoon at a time, only if the dough feels dry. Stop when it is soft and does not crack when pressed.
  5. Rest it for 10 minutes, covered.
  6. Pat each ball out on a greased sheet, or roll it between two sheets of butter paper. Keep it thicker than a wheat roti.
  7. Cook on a medium-hot tawa, flipping once the base firms up. For puri, fry small, thick discs in hot oil.

The other three in the kitchen

  • Singhare ka atta: use the same potato trick for roti. It shines in halwa, and it makes a crisp pakora coat.
  • Rajgira: the flour makes a roti with potato. The seeds pop into puffed rajgira for laddoo and chikki with jaggery.
  • Samak ke chawal: rinse and cook it like rice, with about double the water. It turns soft fast, so check early.

Kuttu vs Rajgira vs Samak: Nutrition per 100 g

Short answer: Per 100 g, kuttu and rajgira give about 12.5 to 13 g of protein, a little more than wheat atta. Samak gives 10.5 g. Rajgira has the most fat. Samak had the most fibre, going by the Indian study we found. We found no reliable figure for singhara flour, so we print none.

The kcal figures in brackets are our conversion from IFCT's kilojoules. The columns come from different labs, so treat small gaps as noise.

IFCT 2017 is India's food composition table from ICMR-NIN. It has rows for amaranth seed and wheat atta, but none for buckwheat, barnyard millet or singhara.

Two mistakes to avoid when you read nutrition charts

  • IFCT's "water chestnut" row is the Chinese water chestnut, Eleocharis dulcis. That is a different plant from singhara, so its numbers are not singhara's.
  • IFCT's "samai" row is little millet, not barnyard millet. A chart that prints it as samak rice has the wrong grain.

Fresh singhara is mostly water. The 2024 Foods study measured about 70% moisture in fresh green water chestnut from Pakistan. The flour is that fruit, dried and ground.

What the table cannot show is the oil. A kuttu puri or singhara pakora takes up oil in the kadhai, and how much depends on your frying. So we give no calorie count per puri.

Samak, Blood Sugar and Fasting With Diabetes

Short answer: One small Indian study found a low glycaemic index for barnyard millet. But a fasting plate of fried kuttu puri is a different story. If you have diabetes, talk to your doctor before you fast.

In a 2014 study in the Journal of Food Science and Technology, researchers in Dharwad tested barnyard millet. Dehulled grain had a glycaemic index of 50.0.

Dehulled and heat-treated grain came in at 41.7. It was one lab and a small group, so read it as a hint, not a rule.

📊 In the same study, people with type 2 diabetes ate barnyard millet for 28 days. Their average blood glucose fell from 139.2 to 131.1 mg/dl.

A 2017 paper in the Indian Journal of Endocrinology and Metabolism looked at Navratri fasting with diabetes. It notes that fasting thalis are often fried kuttu, singhara and sabudana dishes.

It suggests boiling, steaming, roasting or baking over frying. It also says many people with diabetes should not fast at all. That includes those with frequent low sugar, poor control, pregnancy or kidney disease.

So a bowl of samak khichdi with curd is a gentler choice than a plate of puris. But the doctor's advice comes first.

Why Kuttu Atta Makes People Ill Every Navratri, and How to Buy It Safely

Short answer: The problem is not buckwheat. It is old, badly stored flour. FSSAI says most festival food-poisoning cases have been linked to kuttu atta, mainly stale stock with fungus. Buy sealed, fresh packs in small amounts and keep them airtight.

Kuttu is eaten mostly in the two Navratris of the year. So the same stock can sit in a store room for months between seasons.

In 2023, a Ghaziabad food safety officer spoke to the Times of India. The officer said kuttu does not grow in the plains, but high in the hills. Traders buy the seed from Himachal Pradesh, Jammu and Arunachal Pradesh, store it, and grind it locally.

What happened, in the regulator's words

  • Ghaziabad, March 2023: 88 people fell ill after eating kuttu chapatis. Officials said the flour was likely stale and had mycotoxins, the poisons some moulds make.
  • Noida, March 2024: over 90 people were taken to hospital after a Maha Shivratri meal. The Hindustan Times reported that samples of the grain and flour failed the state lab's tests.
  • Delhi, September 2025: at least 200 people in northwest Delhi fell ill after eating kuttu ka atta dishes, the Times of India reported.

📊 In March 2024, FSSAI wrote to its officers about festival food poisoning. It said most cases, especially in Navratri, were linked to kuttu atta. It named old stock with fungus as the likely cause.

The same letter asked for extra checks on singhara atta and samak rice too. It warned about sellers who adulterate or sell stale flour when demand is high.

How to buy and store kuttu ka atta

  1. Buy a sealed pack. Look for a brand name, an FSSAI licence number and a recent date. Skip loose flour from an open sack.
  2. Buy only what you need this Navratri. Do not keep a big bag for next season.
  3. Smell it before you cook. Fresh kuttu smells mild and nutty. If it smells musty, sour or bitter, throw it out.
  4. Look at it. Clumps, webbing, bugs or a green tint mean it goes in the bin.
  5. Store it airtight. Keep it in a dry, cool place away from the stove. Use a dry spoon every time.

If people fall ill with vomiting or stomach pain after a kuttu meal, get medical help. Keep the pack, as food safety officers may want to test it.

Which One to Pick: Kuttu, Singhara, Rajgira or Samak?

Short answer: For puri and roti, pick kuttu. For halwa and pakora, pick singhara. For laddoo and chikki, pick rajgira. For a rice-like meal, pick samak.
