Homemade Ginger Ale Recipe: Real Ginger, Real Fizz (No Syrup)

Homemade ginger ale tastes nothing like the store-bought version. Store ginger ale (like Schweppes or Canada Dry) uses ginger flavouring. It barely contains real ginger. When you make it from scratch, the ginger heat is real. The flavour is sharp and warm.

Step 1: Make the Ginger Syrup (10 Minutes)
This syrup is the heart of the recipe. Make it once, store it in the fridge, and use it all week.
Ingredients for Ginger Syrup
- 100 grams fresh ginger (about a 3-inch piece)
- 1 cup water (250ml)
- Half cup sugar (or honey for a healthier version)
- Juice of 1 lemon
- 2 to 3 whole cloves (optional, adds depth)
- 1 small cinnamon stick (optional)
Steps
- Peel and grate the ginger. A fine grater works best. You want the juice and pulp.
- Combine in a saucepan: grated ginger, water, sugar, cloves, and cinnamon.
- Bring to a boil. Then reduce heat and simmer for 10 minutes. Stir occasionally.
- Remove from heat. Add lemon juice. Let it cool for 10 minutes.
- Strain through a fine mesh. Press the pulp to extract all the flavour.
- Store in a glass jar in the fridge. Lasts 7 to 10 days.
Step 2: Make the Ginger Ale (2 Minutes)
Per Serving
- 500ml cold water + 1 CO2 capsule
- 2 to 3 tablespoons ginger syrup (adjust to taste)
- Ice cubes
- Lemon slice for garnish
Steps
- Carbonate cold water with one capsule.
- Add ginger syrup to a tall glass with ice.
- Pour soda slowly over the syrup. Stir once gently.
- Add a lemon slice and serve right away.

Spicy Ginger Ale
Add half a teaspoon of freshly cracked black pepper and a tiny pinch of cayenne. This gives a fiery kick. Popular in cocktail bars.
Honey Ginger Ale
Replace sugar with honey in the syrup. The flavour is rounder and less sweet. Also makes a good sore throat remedy in winter.
Turmeric Ginger Ale
Add half a teaspoon of turmeric to the syrup while simmering. The colour turns golden. The taste gets earthy. Great for immunity.
Homemade vs Store-Bought Ginger Ale
Store-bought ginger ale barely contains ginger. The label usually says "ginger flavouring" or "natural flavours." Homemade uses 100g of real ginger per batch. You can taste the difference immediately.
Store-bought also has 20 to 30 grams of sugar per can. With homemade, you control the sweetness. You can use honey or cut the sugar in half.

Does homemade ginger ale taste like Schweppes?
No. It tastes much better. You get real ginger heat and brightness. Schweppes uses artificial ginger flavouring. The difference is like fresh juice versus packaged juice.
How long does ginger syrup last?
Seven to 10 days in the fridge in a sealed glass jar. If it starts to ferment (bubbles forming on its own), discard it and make a fresh batch.
Can I make ginger ale without sugar?
You can reduce the sugar or use a sugar substitute. Without any sweetener, the ginger will taste very sharp and spicy. Most people prefer at least a little honey.
Is ginger ale good for nausea?
Real ginger has mild anti-nausea properties. Store-bought ginger ale has too little ginger to help. Homemade, with real ginger, is more likely to settle your stomach.
Can I carbonate the ginger syrup directly?
