How to Make Cola at Home: Homemade Recipe (Tastes Real)
How to Make Cola at Home: A Homemade Recipe That Actually Tastes Right
Quick Action Checklist
Homemade cola is a spiced jaggery syrup topped with chilled sparkling water. You simmer jaggery, cinnamon, cardamom and ginger for 15 minutes. Strain it and chill it. Then pour 2 to 3 tablespoons into a glass and top it with 200 ml of sparkling water. One glass carries about 30 calories. A 330 ml can of Coca-Cola carries about 140.
- Choose your sweetener — jaggery, honey, stevia or plain sugar. This recipe uses 100 g of jaggery.
- Dissolve it — stir 100 g jaggery into 200 ml water over medium heat for 2 to 3 minutes. Do not let it boil hard.
- Add the spices — cinnamon, cardamom, grated ginger, and star anise, cloves and nutmeg if you want them. Simmer on low for 8 to 10 minutes.
- Strain — take it off the heat, stir in the vanilla and lemon juice, then pour it through a fine sieve into a glass jar.
- Cool it — let the syrup reach room temperature, then refrigerate. It keeps for 2 weeks.
- Pour — 2 to 3 tablespoons of syrup into a glass, then ice.
- Top with fizz — 200 ml of chilled sparkling water. Stir once, gently, or you lose the bubbles.
Why Make Cola at Home
Learning to make cola at home the right way starts with good technique. A standard 330 ml can of Coca-Cola contains approximately 35 g of sugar. That is nearly 9 teaspoons. A 500 ml bottle has about 53 g. If you drink one can a day, you consume over 12 kg of sugar per year from soft drinks alone.
Homemade cola lets you control every ingredient. You decide how much sweetener goes in. You choose whether it is jaggery, honey, stevia, or regular sugar. You skip the phosphoric acid, the caramel colouring, and the high-fructose corn syrup. The result tastes different from Coke - I will not pretend otherwise - but it tastes good. It tastes like cola used to taste before it became industrialised.
The recipe below uses what is already in an Indian kitchen. Jaggery, cinnamon, cardamom, ginger, lemon, and sparkling water. You can make the syrup in 15 minutes, and it stores in the fridge for up to 2 weeks. For more on making sparkling water at home, see my guide on how to make soda water.
What Do You Need to Make Cola at Home?
Makes: About 250 ml of syrup. That is 8 to 10 glasses of cola.
Ingredients
- 100 g jaggery (gur) - powdered or grated for faster dissolving
- 200 ml water - for making the syrup
- 1 cinnamon stick (dalchini) - about 3 inches
- 3 green cardamom pods (elaichi) - lightly crushed
- 1 inch fresh ginger - grated or thinly sliced
- 1/2 teaspoon vanilla extract - or scrape half a vanilla bean
- Juice of 1 lemon - approximately 2 tablespoons
- 1 star anise (optional - adds depth)
- 2 cloves (laung) - optional, adds warmth
- A pinch of nutmeg powder (jaiphal) - optional
For the glass: Chilled sparkling water. About 200 ml a glass.
How Do You Make It Step by Step?
Four steps, about 18 minutes of work, and most of that is the syrup simmering on its own.
Step 1: Make the Jaggery Syrup Base (5 minutes)
Combine the jaggery and 200 ml water in a saucepan over medium heat. Stir until the jaggery dissolves completely. This takes 2 - 3 minutes. Do not let it boil vigorously - a gentle simmer is all you need.
Step 2: Add the Spices (10 minutes)
Once the jaggery is dissolved, add the cinnamon stick, the crushed cardamom pods and the grated ginger. Add star anise, cloves and nutmeg powder too, if you want them. Reduce the heat to low and let the mixture simmer gently for 8 - 10 minutes. The kitchen will smell very good. The liquid will darken slightly and reduce by about a quarter.
Step 3: Strain and Finish (2 minutes)
Remove from heat. Add the vanilla extract and lemon juice. Stir well. Strain the syrup through a fine mesh sieve or muslin cloth into a glass jar. Discard the whole spices. Let the syrup cool to room temperature, then refrigerate.
Step 4: Assemble Your Cola (30 seconds)
Pour 2 - 3 tablespoons of the syrup into a glass. Add ice cubes. Top with 200 ml of chilled sparkling water. Stir gently - not vigorously, or you will lose the fizz. Taste and adjust the syrup quantity to your preference.
If you are using an InstaCuppa Portable Soda Maker, carbonate 1 litre of cold water first, then pour over the syrup. Do not add syrup to the bottle before carbonating - it will foam over. For the full method on carbonating water, see my 5 methods for making soda at home.
Storage
The syrup stores in a sealed glass jar in the fridge for up to 2 weeks. It thickens slightly when cold - this is normal. Let it sit at room temperature for 5 minutes before using, or stir it into the sparkling water more vigorously.
Variations: Make It Your Own
The base syrup takes three turns. Each one changes a single ingredient.
Vanilla Cola
Double the vanilla extract to 1 teaspoon. Skip the star anise and cloves. This gives a smoother, sweeter flavour profile that is closer to commercial vanilla colas. Works especially well with less jaggery (75 g instead of 100 g) for a lighter drink.
Lime Cola
Replace the lemon juice with lime juice (2 limes instead of 1 lemon). Add a few thin slices of lime directly to the glass when serving. The lime gives a sharper, more citrusy edge. This one is my favourite. It tastes like a very good masala lemon soda with a cola note under it.
Masala Cola
Add 1/2 teaspoon of roasted cumin powder (bhuna jeera) and a pinch of black salt (kala namak) to the finished syrup before straining. This gives the cola a savoury, tangy kick that is uniquely Indian. If you enjoy jaljeera, you will love this. Top with sparkling water and a sprig of fresh mint. Frequently Asked Questions
Does homemade cola taste like Coca-Cola?
No, and that is the point. Coca-Cola uses a secret flavour blend, phosphoric acid and corn syrup. You cannot copy that at home. Homemade cola tastes like a spiced, natural cola. Closer to what cola tasted like a hundred years ago. Most people who try it say it reminds them of masala soda or a premium craft cola.
Can I use sugar instead of jaggery?
Yes. Use 80 g of white sugar or brown sugar in place of 100 g of jaggery. Brown sugar gives a richer, slightly caramel-like flavour that works well. White sugar makes a cleaner, lighter cola. You can also use honey (80 ml) or coconut sugar (90 g). Each sweetener changes the flavour profile slightly.
How long does the cola syrup last in the fridge?
The syrup keeps for up to 2 weeks in a sealed glass jar in the fridge. The high sugar content acts as a natural preservative. If you notice any mould or off-smell, discard it. For longer storage, you can freeze the syrup in ice cube trays - each cube is roughly 1 tablespoon, perfect for a single glass of cola.
How do you make Coca-Cola at home?
You cannot copy Coca-Cola exactly, because its flavour blend is not public. What you can make is a spiced cola syrup that tastes close. Jaggery, cinnamon, cardamom, ginger, vanilla and lemon. Simmer it 15 minutes, then top it with sparkling water. That is the recipe on this page.
What is a craft cola recipe?
Craft cola means cola made from whole spices and a real sweetener instead of flavour concentrate and phosphoric acid. The syrup here is a craft cola: 100 g jaggery, whole cinnamon, cardamom pods, fresh ginger, and no additives. It makes 8 to 10 glasses.
