High uric acid in the blood is a growing problem in India. It causes gout — sudden, sharp joint pain, often in the big toe or knees. The pain can be very intense and come on without warning.
Uric acid is a waste product that forms when the body breaks down purines. Purines are found in many common foods. When too much uric acid builds up in the blood, it forms sharp crystals in the joints. These crystals cause the pain of gout.
The good news: diet changes can cut uric acid levels significantly. What you eat — and drink — has a major impact on how much uric acid your body makes and how well it removes it.
Drinking enough water is the single most effective diet habit for reducing uric acid. The kidneys remove uric acid from the blood through urine. When you drink more water, the kidneys can flush more uric acid out. Aim for 3 to 4 litres of water per day if you have high uric acid. This alone — without any other diet change — can reduce uric acid levels by 20 to 30% in 4 to 6 weeks. Start with 2 glasses of warm water every morning before breakfast.
What Causes High Uric Acid
Uric acid is made when the body breaks down purines. Purines are natural compounds found in many foods — especially animal proteins and some vegetables.
The body normally removes uric acid through the kidneys. When uric acid builds up — either because the body makes too much or the kidneys remove too little — it starts forming sharp crystals in the joints. These crystals cause gout pain.
Common causes of high uric acid in India:
- Eating too much red meat, organ meats, or shell fish
- Drinking too little water
- Drinking alcohol, especially beer

- Being overweight
- Kidney problems (kidneys not flushing uric acid well)
Foods That Raise Uric Acid
High-Purine Foods (Avoid or Limit Heavily)
- Organ meats: Liver, kidney, brain (goat, chicken, or beef). These are the highest-purine foods. Avoid completely if you have gout.
- Red meat: Mutton, beef, lamb. Eat no more than once a week. Avoid during a gout attack.
- Shellfish: Prawns, crabs, mussels. High in purines. Limit to small amounts.
- Dals in large amounts: Moong, masoor, urad, and toor dal have moderate purines. Small daily amounts are fine. But very large amounts (3+ bowls per day) can raise uric acid.
Fructose and Sweet Drinks
Sugar — especially fructose — directly raises uric acid. This is often overlooked.
- Cola and sweet sodas — even "diet" options can be a problem
- Fruit juice — even fresh fruit juice has high fructose
- Sweet lassi, mango shakes, flavoured milk
- Packaged sweets and mithai with corn syrup or high sugar content
Alcohol
Beer is the worst drink for uric acid. Beer has purines AND alcohol. Alcohol also slows the kidneys from flushing uric acid. Even 2 beers can trigger a gout attack in someone with high uric acid. Avoid completely if you have gout.
Best Foods to Lower Uric Acid
Water — Drink 3 to 4 Litres Daily
The most important habit. Water helps the kidneys flush uric acid out of the body. Drink warm water in the morning. Keep a bottle with you during the day. Aim for at least 10 to 12 glasses every day.
Cherries and Jamun
Cherries are the most studied food for reducing gout attacks. They contain plant matter that lowers uric acid and reduces swelling in joints. In India, jamun (Indian blackberry) has similar properties and is available in season (June to August).
Eat fresh jamun when in season. Or drink diluted jamun juice. Even 1 to 2 small servings daily helps.
Low-Fat Dairy
Milk and curd actually help reduce uric acid. They help the kidneys flush uric acid out faster. Drink 1 to 2 glasses of low-fat milk or eat plain curd daily.
Vegetables (Most Are Safe)
Most vegetables are safe and good for high uric acid. Eat freely. The vegetables that used to be restricted — like spinach and mushrooms — are now known to be safe in normal amounts for gout patients.
- Cucumber — very good. High water content. Helps kidneys flush uric acid.
- Bottle gourd (lauki) — excellent. Mild, high water, easy on kidneys.
- Bitter gourd (karela) — helps with uric acid. Eat 2 to 3 times per week.
- Leafy greens — safe in normal amounts. Eat daily.
- All other vegetables — safe. Eat freely.
Low-Purine Grains
White rice, wheat roti, jowar, bajra, and ragi have low purines. These are safe for gout patients. Eat as normal.
Fruits
Most fruits are safe. Low-sugar fruits are better than high-sugar fruits. Cherries and jamun are especially good. Eat 1 to 2 fruits per day.
Vitamin C-Rich Foods
Vitamin C helps the kidneys remove uric acid. Amla is one of the best sources of Vitamin C in India. Eat 1 to 2 fresh amla daily or drink amla juice. Lemon water in the morning is also very good — despite being acidic, lemon actually helps lower uric acid levels in the blood.
Sample Day Diet for High Uric Acid
Morning
2 glasses of warm water first thing. Then amla juice (20 ml in water) or warm lemon water.
Breakfast
1 bowl oats with vegetables. Or jowar roti + vegetable sabzi + curd. Or 2 boiled eggs + whole wheat toast. Keep breakfast light.
During the Day
Drink water every hour. Aim for 3 to 4 litres by end of day. Keep a water bottle at your desk or workplace.
Lunch
Dal (1 small bowl — not 3 bowls) + sabzi + 1 small bowl rice or 2 rotis + curd + cucumber raita or salad.
Snack
A few walnuts or almonds. Or 1 glass low-fat buttermilk. Or 1 small fruit.
Dinner
Light. 2 rotis + vegetable sabzi. Or a bowl of vegetable soup + 1 roti. Avoid heavy meat dishes at dinner. Uric acid builds up overnight — a heavy dinner makes this worse.
What to Do During a Gout Attack
A gout attack means sudden, very sharp joint pain — usually in the big toe, ankle, or knee. It often comes at night or early morning. The joint looks red and feels hot and swollen.
During the Attack
- Drink a lot of water: 3 to 4 litres per day. More water = faster uric acid removal.
- Avoid all high-purine foods: No meat, no dal (for 2 to 3 days), no alcohol, no sweet drinks.
- Ice the joint: Wrap ice in a cloth. Apply to the painful joint for 20 minutes. This reduces pain and swelling.
- Rest the joint: Keep the foot or joint elevated. Do not put weight on it.
- See a doctor: Gout attacks are best treated with medicine. Diet alone cannot stop an active attack quickly. Your doctor can prescribe medicine to stop the attack fast.
After the Attack
Once the attack is over, start the uric acid diet properly. Many people wait until the pain returns before taking diet seriously. That is too late. The best time to start is right after the first attack — before it becomes a regular problem.
Keep drinking 3 to 4 litres of water daily. Keep animal protein to small amounts. Cut sweet drinks completely. Get your uric acid levels tested every 3 to 6 months.

Yes, in moderate amounts. A small bowl of dal per meal is fine. Dal has moderate purines but also has plant protein, fibre, and nutrients. The old advice to avoid all dal is outdated. Current guidelines allow moderate dal intake for gout patients. If you have a gout attack, reduce dal for a few days. In normal times, 1 bowl per meal is safe.
