What Is Bombay Schezwan Chutney?
Bombay schezwan chutney is a thick, fiery red paste of soaked dry red chillies, garlic and ginger, cooked in oil with vinegar and soy sauce. Mumbai street stalls spread it inside schezwan dosa and frankies, and toss it through fried rice. It is not really Chinese. It is an Indian creation that borrows a Chinese name. Indo-Chinese food grew out of Kolkata's Chinese community, and Mumbai turned it into street food.
I make schezwan chutney at home in small batches. A 15 g tablespoon of Ching's Secret Schezwan Chutney has 296 mg of sodium, going by its label. Homemade is not lower by default. This recipe's 5 g of salt and 15 ml of soy sauce put about 290 mg in each tablespoon too. The gain is control: you choose the salt. The InstaCuppa Electric Chopper 2L turns the soaked chillies into a smooth paste in four or five 10-second pulses.
One important step most recipes skip: You must soak the dry red chilies in warm water for 30 minutes before using the chopper. Without soaking, the chillies stay tough and the chopper cannot break them down. Soaked chillies are soft. They blend easily and give a smoother paste.
How Many Calories Are in Schezwan Chutney?
Homemade schezwan chutney is not lighter than the jar. One tablespoon of this recipe has about 64 calories and 290 mg of sodium. The oil and the salt are real, so the numbers are too. Here is the comparison, worked out from the recipe.
| Calories (homemade, one-tenth of the batch) | about 64 kcal |
| Calories (Ching's Secret, 15 g) | 26 kcal |
| Fat (homemade) | 4.9 g |
| Fat (Ching's Secret, 15 g) | 1.0 g |
| Sodium (homemade) | about 290 mg |
| Sodium (Ching's Secret, 15 g) | 296 mg |
| Protein (homemade) | 1.2 g |
Homemade: computed on this recipe's full batch, then divided by its yield of about 10 tablespoons. Chillies, garlic and ginger from IFCT 2017 Table 1 (codes G022, G011, G014). Oil, soy sauce, sugar, salt, ketchup and vinegar from USDA FoodData Central (FDC IDs 171025, 174277, 169655, 173468, 168556, 173469). The whole batch comes to about 645 kcal, 48.5 g fat and 2,920 mg sodium. Most of that sodium is the 5 g of salt (1,940 mg) and the soy sauce (about 820 mg). How to Make Schezwan Chutney at Home (Street Style)
This schezwan chutney recipe makes about 10 tablespoons of thick paste. It keeps 4 days in the fridge, or much longer in the freezer. Here is the step-by-step method.
- Soak the chilies - Place 50 g dry red chilies in a bowl. Cover with warm water. Let them soak for 30 minutes. This is the most important step - soaking softens the fibres and makes grinding easy.
- Grind the chili paste - Drain the soaked chilies. Add them to the InstaCuppa Electric Chopper 2L with garlic and ginger. Pulse 4-5 times, 10 seconds each. Scrape the sides between pulses. You want a smooth, fine paste.
- Heat the oil - Warm 45 g oil in a pan on medium heat. Add the chili-garlic-ginger paste. Cook for 5-7 minutes on low heat, stirring often. The paste will darken slightly and the raw garlic smell will fade.
- Add seasonings - Stir in salt, sugar, vinegar, ketchup, soy sauce and, if you like, a pinch of black pepper. Cook for another 5 minutes on low. Add 50-100 ml water if you want a thinner consistency.
- Cool and store - Let the chutney cool, and get it into the fridge within 2 hours. Transfer to a clean glass jar. Use it within 4 days, or freeze small portions for later.

Can We Keep Schezwan Chutney Without a Fridge?
No. Homemade schezwan chutney must go in the fridge, and it keeps about 4 days there. The reason is the garlic under oil. Oregon State University Extension says raw or cooked garlic in oil must be refrigerated and used within 4 days, or frozen. Oil shuts out air. Low air is the condition Clostridium botulinum, the botulism germ, needs to grow at room temperature.
Our recipe has vinegar, and it is cooked. That helps, but it is not a tested way to preserve food. Oregon State says acidifying homemade garlic-in-oil mixtures "can't be recommended until research is conducted". A home kitchen also has no way to check how acidic a jar is. So we follow the safe rule, not the hopeful one.
Here is what to do. Cool the chutney and put it in the fridge within 2 hours of cooking, or within 1 hour on a hot day. Keep it in a clean glass jar and finish it in 4 days. For a bigger batch, freeze it in an ice-cube tray and thaw one cube at a time. Always use a dry spoon.
Why can a shop jar sit on a shelf? Oregon State notes that commercial garlic-in-oil products are acidified to a tested level. The Ching's Secret label also lists an acidity regulator. Once a jar is open, follow the storage line printed on it.
A correction: this page used to say homemade schezwan chutney lasts "up to 1 month in the fridge". That is longer than the extension guidance allows, so we changed it.
The Bombay Street Food Connection
Schezwan chutney belongs to Bombay street food. The name points to China's Sichuan province, but Indo-Chinese "Schezwan" dishes bear little likeness to Sichuan cooking. The roots are in Kolkata. The first recorded Chinese settler there, Tong Achew, arrived in 1778 and set up a sugar mill. Hakka families moved to Tangra in the early 1900s and ran tanneries and restaurants. In Mumbai, Nelson Wang, born in Kolkata in 1950, is credited with creating chicken Manchurian at the Cricket Club of India in 1975. He opened China Garden at Kemps Corner in 1983.
Capsaicin and metabolism: The heat in schezwan chutney comes from capsaicin in dry red chillies. A 2012 review of 20 trials with 563 people found capsaicin-type compounds raised energy use by about 50 kcal a day (Whiting and others, Appetite 2012, PMID 22634197). A second review found the effect small, and strongest at high doses (Ludy and others, Chemical Senses 2012, PMID 22038945). A spoon of chutney will not melt weight. Enjoy it for the flavour.
Chutney vs sauce: Schezwan chutney is thick, paste-like, and used as a dip or filling. Schezwan sauce is thinner, pourable, and used for cooking stir-fries. Same base ingredients, different water ratios. Calories depend on how much oil each cook uses, so check the label on any jar. We have no measured figure for a sauce, so we do not quote one.

4 Common Schezwan Chutney Mistakes
1. Skipping the 30-minute soak. Dry chilies are tough and fibrous. Without soaking, even the best chopper will produce a gritty paste with visible chili skin bits. Always soak in warm water for 30 minutes.
2. Overcooking the garlic. Garlic burns fast. Once the paste is in the pan, keep the heat on low and stir constantly. Burnt garlic makes the entire batch bitter and unusable.
3. Too much oil. The recipe needs only 45 g (3 tablespoons). More oil makes the chutney greasy and adds calories you do not need. The paste should be thick, not swimming in oil.
4. Grinding dry chilies without soaking. This is a chopper killer. Dry, hard chilies strain the motor and produce fibrous paste. Always soak first, drain, then chop. The soaked chilies blend into a smooth paste in under 60 seconds.
Frequently Asked Questions
How long does homemade schezwan chutney last?
Homemade schezwan chutney keeps 4 days in the fridge in a clean, airtight glass jar. For longer, freeze it in small portions. That is the Oregon State University Extension rule for cooked garlic in oil. The vinegar in the recipe helps, but at home it is not a tested preservative. Always use a dry spoon to scoop.
Can we keep schezwan chutney without fridge?
No. Homemade schezwan chutney is cooked garlic and chilli under oil, and Oregon State University Extension says garlic in oil must be refrigerated and used within 4 days, or frozen. Put it in the fridge within 2 hours of cooking. Shop jars can sit on a shelf because they are acidified to a tested level.
Is homemade schezwan chutney healthier than store-bought?
Not on salt or calories. One tablespoon of this recipe has about 64 calories and 290 mg of sodium. A 15 g tablespoon of Ching's Secret has 26 calories and 296 mg of sodium. Homemade wins on control and on having no thickener. Halve the salt to 2.5 g and each tablespoon drops by about 97 mg of sodium.
Why do I need to soak dry red chilies before grinding?
Dry red chilies are tough and fibrous. Soaking them in warm water for 30 minutes softens the fibres, rehydrates the skin, and allows the chopper blades to break them into a smooth paste. Without soaking, you get a gritty texture with visible chili skin bits.
What is the difference between schezwan chutney and schezwan sauce?
Schezwan chutney is thick and paste-like, used as a dip or spread. Schezwan sauce is thinner and pourable, used for cooking stir-fries. Same base ingredients, different amount of water. Calories depend on the oil each cook uses, so read the label on a jar.
Can I make schezwan chutney less spicy?
Yes. Split the chillies and shake out the seeds and the pale inner ribs before soaking. The heat is made in glands along that pale rib, called the placenta, not in the seeds. You can also use Kashmiri red chillies, which give deep red colour with mild heat. Or cut the chillies to 30 g instead of 50 g.
