What Counts as a Ladle, and What Does Not
Short answer: A ladle is a bowl on a handle. Its job is to hold a measured amount of liquid and pour it. A spoon stirs. A turner flips. A ladle carries volume.
Most Indian kitchens own three long-handled tools. They look related. They do completely different work.
The ladle is the only one shaped like a cup. That shape is the whole point.

The names shift across India. A karchhi in Delhi is a doya in Gujarat and a dav in Maharashtra.
In Tamil kitchens it is a karandi. In Telugu homes, a garite. The tool is the same everywhere.

The Katori Is Standardised. Your Karchhi Is Not.
Short answer: India's national dietary guideline publishes exact katori volumes. It publishes nothing for the ladle. So the bowl you pour into is measured, and the tool you pour with is a guess.
The ICMR-National Institute of Nutrition writes the country's dietary guidance. Its 2024 edition does something quietly useful.
It fixes the katori. Annexure I lists a standard set of measuring bowls by volume.

The full research ladder runs wider than four bowls. It goes from 1,500 ml down to 25 ml.

Every diet chart in that guideline is then written in these units. The footnote under each one reads: 1 cup/katori = 200 ml.
The weights behind them were taken on a kitchen scale, not by eye. The guideline names the model it used, a Seca Culina 852.
And it is honest about why this was needed at all.

That sentence is about bowls. It applies twice as hard to ladles.

Nobody publishes a capacity for the karchhi. It is the one uncalibrated step between a national recommendation and your plate.
Which is why the fix is simple. Match your ladle to your katori, and you turn a guess into a count.
Ladle Sizes in ML, and What Each One Suits
Short answer: Indian steel ladles usually run from about 30 ml to about 250 ml at the bowl. There is no standard, so treat these as shop sizes, not rules.
Walk into any utensil shop and the ladles are sorted by look, not by volume. Almost none carry a printed capacity.
Here is the practical range, and what each size actually does at an Indian table.

Notice the middle row. The 80 to 110 ml ladle is the one most homes already own.
That is not an accident. Two pours of it fill the standard medium katori almost exactly.
How to measure the ladle you already own
You do not need to buy anything to find out. You need water and one minute.
- Fill the ladle to the brim with water.
- Pour it into a measuring jug, or into any bottle with ml markings.
- Repeat twice and take the middle reading.
- Write the number on a slip and stick it inside your utensil drawer.
Now every recipe instruction that says "two ladles" means something fixed in your kitchen. That is the whole trick.

How Many Pours Fill One Katori
Short answer: Divide the katori volume by your ladle volume. A 200 ml katori takes two pours of a 100 ml ladle, or three of a 70 ml one.
This is the arithmetic that makes a ladle useful. It only works once you know your own number.

The katori sizes in that table are the four from the national guideline. They are not invented for this page.
One caution before you trust any of it too far. The guideline itself flags how small a difference the eye can catch.

So do not chase precision you cannot see. Counting pours gets you close, and close is a large improvement on guessing.
One more thing the table hides. A ladle brimmed to the rim spills on the way to the bowl.
Most people fill to about four-fifths. Measure yours at a realistic fill, not a laboratory one.
Using the Ladle for Portion Control
Short answer: India's daily target is 85 g of pulses and legumes an adult. Counting ladles is the easiest way to serve towards it without weighing anything.
The ICMR-NIN "My Plate for the Day" sets daily amounts for an adult. They are raw quantities, per person.

Now look at what actually happens on Indian plates. The same guideline reports the gap plainly.

Read those two nuggets together and the story is simple. Too much rice and roti, not enough dal.
The ladle is where that gets fixed, meal by meal. It is the tool that decides the dal half of the plate.
A practical serving habit
- Serve the dal first, while the plate is empty. Rice second.
- Use a known ladle and count. Two pours of a 100 ml karchhi per katori.
- Give the thick bottom of the pot a stir before each pour, or the last person gets only water.
- Keep a smaller ladle for children rather than half-filling a big one.

The oil half of the same problem
Fats and oils get 27 g a day in that same plate. A teaspoon is 5 g, so that is roughly five teaspoons.

Bowl Depth: Thin Dal, Thick Sabzi and the Solids Problem
Short answer: A deep round bowl suits thin liquids. A wider, shallower bowl lifts pieces without crushing them. Depth decides what you can carry, not just how much.
Two ladles can hold the same 100 ml and behave nothing alike. Shape is the reason.
A deep hemispherical bowl holds its volume in a tight column. It is ideal for rasam, kadhi and watery dal.
A shallow wide bowl spreads the same volume thin. That is what you want for chole, rajma or a curry with potato.
Why a deep ladle fails on chunky curry
Pieces sit on the bottom of a pot. A deep narrow bowl reaches down and comes up mostly with gravy.
A wider mouth scoops across the base instead. You get solids and liquid in the ratio the dish was cooked at.
This is the single most common complaint about serving. One person gets the rajma, the next gets the water.
- Thin dal, rasam, kadhi, milk: deep round bowl, smooth inside
- Sambar with vegetables: medium depth, wide mouth
- Chole, rajma, thick sabzi gravy: shallow and wide, almost a deep spoon
- Payasam and kheer: deep, and a spout helps
One more test before you buy. Look at where the bowl meets the handle.
A smooth continuous curve rinses clean. A sharp welded corner traps dal and needs a brush.
Why Your Ladle Dribbles Down Its Own Side
Short answer: The stream clings to the rim instead of breaking away. Physicists call it the teapot effect, and it is set by the edge and the wetting, not by how careful you are.
Every Indian kitchen knows this stain. You tilt the karchhi, and a trail of dal runs backwards under the bowl.
It is not clumsiness. It is a studied piece of fluid physics, and pouring vessels have been tested for it.

A later analysis of the same problem reached the edge itself. It found detachment governed by the wetting of the fluid and by a microscopically wedge-shaped edge.

These studies used laboratory pouring, not karchhis. But the mechanism is the same one in your hand.
What that means when you are serving
- A thin, sharp rim drips less than a thick rolled one. A rolled edge curves the flow back under the bowl.
- A pouring lip is a deliberately sharpened edge. That is all a spout is, and it is why it works.
- Pour decisively. Slow, hesitant tilting is the condition dribbling likes best.
- A greasy film changes the wetting. A ladle wiped clean pours more cleanly than one with dried dal on the rim.
- Stop the pour with a lift, not a slow tilt back. Lifting breaks the stream; easing back lets it crawl.
If you serve a lot of thin dal or rasam, buy the spout. It is the one feature on a ladle with real physics behind it.
Look at ladles with a pouring lip or ladles with marked measures.
Handle Length, Balance and the Rim Hook
Short answer: The handle should clear the rim of your deepest pot with room to spare. A hook at the end stops the ladle sliding in.
Handle length is a volume question in disguise. A big pot needs a long handle to reach the last ladleful.
Measure your deepest vessel, then add a hand's width. That is your minimum.
- Everyday dal pot or small cooker: a handle around 25 to 30 cm is plenty
- Tall stock pot or biryani handi: 35 cm or longer, or your knuckles meet the steam
- Serving at the table: shorter is easier to control over a full plate
The hook is not decoration
Look at the end of a good karchhi. There is usually a bend, a notch or a hole.
The bend catches the rim of the pot so the ladle does not slide in. The hole hangs it on a rail.
Balance matters as much as length. Rest the ladle on one finger at the midpoint.
If the bowl crashes down, a full load will fight you. A ladle that sits near level is easier to pour accurately.
For deep vessels specifically, compare long-handled ladles rather than buying whatever is in the set.
The Jhara: Volume Without the Liquid
Short answer: A jhara is a ladle with the liquid removed. The holes let oil or water fall back, so you lift only the food.
The perforated disc goes by several names. Jhara, skimmer, frying spoon, chhanni ladle.
Its job is the mirror image of a karchhi. One carries liquid, the other refuses to.
Where it earns its place
- Lifting pakoras, puris and samosas out of hot oil, draining as they rise
- Scooping boiled potatoes or momos out of water
- Skimming foam off dal or stock
- Lifting paneer cubes out of hot water without breaking them
That draining step matters more than it looks. Oil that falls back into the kadai is oil that never reaches the plate.
Remember the daily figure from the guideline: 27 g of fats and oils an adult. A few seconds of draining is worth real grams.
Hold the jhara over the pan and count to five. Then move it.

If you do not own one, compare perforated jhara skimmers by disc size. A wider disc drains faster but is harder to fit in a narrow kadai.
Buying a Ladle in India: What to Check
Short answer: Check the capacity, the rim, the joint and the handle. Capacity is the one nobody prints, so measure it or ask.
There is an Indian Standard for spoons. It is IS 16286:2014, listed by the Bureau of Indian Standards as active.

Useful to know, but it will not help you in the shop. The standard's text is sold, not published free.
Nothing you can read on the ladle tells you its volume. So the checklist below does the work instead.

How many do you actually need
Two covers most homes. One medium karchhi around 100 ml, and one jhara.
Add a third only if you cook a lot of thin rasam or serve large numbers. That is when a spouted or extra-large ladle pays.

Short answer: Rinse the bowl and the joint straight after serving. Store it dry and hanging, not lying in a wet drawer.
A ladle spends its life in hot liquid. Then it usually lands on the counter in a small yellow puddle.
That puddle is the whole maintenance problem. Dal dries hard, and the joint is where it hides.
- Rinse immediately after serving, while the dal is still soft
- Pay attention to the inside of the bowl and the handle joint
- Dry it before it goes away, especially a welded ladle
- Hang it rather than stacking it wet with other steel
- Do not scrub a mirror-polished bowl with steel wool, it dulls the finish that helps it pour
Storage is the part most kitchens get wrong. A wet ladle in a closed drawer stays wet for hours.
Hanging solves it. A wall holder with a drain tray keeps the drip off the counter too.

How many ml is a standard ladle?
There is no published Indian standard for ladle capacity. Common steel ladles run from about 30 ml for tadka up to 250 ml for bulk serving, with 80 to 110 ml the usual household size. The reliable answer is to measure your own: fill it with water and pour that into a marked jug.
How many ladles of dal make one katori?
It depends on both. The ICMR-NIN guideline treats a medium katori as 200 ml, so a 100 ml ladle fills it in two pours and a 70 ml ladle in three. Measure your ladle once and the count stays fixed.
What is a karchhi called in English?
A ladle. Karchhi or karchhul is the Hindi name for the deep cup-shaped serving tool used for dal, sambar and curry. It is called doya in Gujarati, dav in Marathi, karandi in Tamil and garite in Telugu.
What size ladle should I buy for a family of four?
One medium ladle of around 100 ml handles everyday dal and sambar for four people, at roughly two pours per katori. Add a jhara for frying. A larger 150 to 200 ml ladle is worth it only if you regularly serve guests.
Why does my ladle drip down its own side when I pour?
This is the teapot effect. Research published in Physical Review Letters found that dripping around a solid edge is controlled by surface wettability, flow speed and the curvature of the edge, and was completely suppressed on a water-repelling surface. In practice, a thin sharp rim or a pouring lip, a clean dry edge and a decisive pour all reduce it.
Is there a BIS standard for ladles in India?
The Bureau of Indian Standards lists IS 16286:2014, Spoons — Specification, as an active standard under the Utensils, Cutlery and Domestic Hardware Sectional Committee. It replaced IS 990:1982, Spoons, Stainless Steel. The text is sold rather than published free, and shop ladles do not carry a printed capacity.
Should a ladle be steel, silicone or wooden?
That depends on the vessel, not the ladle. Steel is fine in steel and in most cookware, while a non-stick surface is safer with silicone or wood. The material safety argument, including what Indian rules cover, is set out in our spatula guide.
What is a jhara used for?
A jhara is the flat perforated skimmer. It lifts fried food out of hot oil and lets the oil drain back into the kadai, and it is also used to scoop boiled items out of water or skim foam off dal.
