Why Make Cola at Home

Learning to make cola at home the right way starts with good technique. A standard 330ml can of Coca-Cola contains approximately 35g of sugar. That is nearly 9 teaspoons. A 500ml bottle has about 53g. If you drink one can a day, you consume over 12 kg of sugar per year from soft drinks alone.

Homemade cola lets you control every ingredient. You decide how much sweetener goes in. You choose whether it is jaggery, honey, stevia, or regular sugar. You skip the phosphoric acid, the caramel colouring, and the high-fructose corn syrup. The result tastes different from Coke - I will not pretend otherwise - but it tastes good. It tastes like cola used to taste before it became industrialised.

The recipe below uses Indian kitchen staples - jaggery, cinnamon, cardamom, ginger, lemon - and sparkling water. You can make the syrup in 15 minutes, and it stores in the fridge for up to 2 weeks. For more on making sparkling water at home, see my guide on how to make soda water.

How Do You Make It Step by Step?

Makes: Approximately 250ml of syrup (enough for 8 - 10 glasses of cola)

Ingredients

  • 100g jaggery (gur) - powdered or grated for faster dissolving
  • 200ml water - for making the syrup
  • 1 cinnamon stick (dalchini) - about 3 inches
  • 3 green cardamom pods (elaichi) - lightly crushed
  • 1 inch fresh ginger - grated or thinly sliced
  • 1/2 teaspoon vanilla extract - or scrape half a vanilla bean
  • Juice of 1 lemon - approximately 2 tablespoons
  • 1 star anise (optional - adds depth)
  • 2 cloves (laung) - optional, adds warmth
  • A pinch of nutmeg powder (jaiphal) - optional

For assembly: Sparkling water (chilled) - approximately 200ml per glass

How Do You Make It Step by Step?

Step 1: Make the Jaggery Syrup Base (5 minutes) Combine the jaggery and 200ml water in a saucepan over medium heat. Stir until the jaggery dissolves completely. This takes 2 - 3 minutes. Do not let it boil vigorously - a gentle simmer is all you need.

Step 2: Add the Spices (10 minutes)

Once the jaggery is dissolved, add the cinnamon stick, crushed cardamom pods, grated ginger, star anise (if using), cloves (if using), and nutmeg powder. Reduce the heat to low and let the mixture simmer gently for 8 - 10 minutes. The kitchen will smell incredible. Step 3: Strain and Finish (2 minutes)

Remove from heat. Add the vanilla extract and lemon juice. Stir well. Strain the syrup through a fine mesh sieve or muslin cloth into a glass jar. Discard the whole spices. Let the syrup cool to room temperature, then refrigerate.

Step 4: Assemble Your Cola (30 seconds)

Pour 2 - 3 tablespoons of the syrup into a glass. Add ice cubes. Top with 200ml of chilled sparkling water. Stir gently - not vigorously, or you will lose the fizz. Taste and adjust the syrup quantity to your preference.

Storage

The syrup stores in a sealed glass jar in the fridge for up to 2 weeks. It thickens slightly when cold - this is normal. Let it sit at room temperature for 5 minutes before using, or stir it into the sparkling water more vigorously.

Variations: Make It Your Own

Vanilla Cola Double the vanilla extract to 1 teaspoon. Skip the star anise and cloves. This gives a smoother, sweeter flavour profile that is closer to commercial vanilla colas. Works especially well with less jaggery (75g instead of 100g) for a lighter drink. Lime Cola Replace the lemon juice with lime juice (2 limes instead of 1 lemon).

Vanilla Cola

Double the vanilla extract to 1 teaspoon. Skip the star anise and cloves. This gives a smoother, sweeter flavour profile that is closer to commercial vanilla colas. Works especially well with less jaggery (75g instead of 100g) for a lighter drink.

Lime Cola

Replace the lemon juice with lime juice (2 limes instead of 1 lemon). Add a few thin slices of lime directly to the glass when serving. The lime gives a sharper, more citrusy edge. This is my personal favourite variation - it tastes like the best masala lemon soda you have ever had, with a cola undertone.

Masala Cola

Add 1/2 teaspoon of roasted cumin powder (bhuna jeera) and a pinch of black salt (kala namak) to the finished syrup before straining. This gives the cola a savoury, tangy kick that is uniquely Indian. If you enjoy jaljeera, you will love this. Top with sparkling water and a sprig of fresh mint. Homemade cola tastes more like a spiced, natural cola - closer to what cola tasted like before mass industrialisation. Most people who try it say it reminds them of masala soda or a premium craft cola.

Can I use sugar instead of jaggery?

Yes. Use 80g of white sugar or brown sugar in place of 100g of jaggery. Brown sugar gives a richer, slightly caramel-like flavour that works well. White sugar makes a cleaner, lighter cola. You can also use honey (80ml) or coconut sugar (90g). Each sweetener changes the flavour profile slightly.

How long does the cola syrup last in the fridge?

The syrup keeps for up to 2 weeks in a sealed glass jar in the fridge. The high sugar content acts as a natural preservative. If you notice any mould or off-smell, discard it. For longer storage, you can freeze the syrup in ice cube trays - each cube is roughly 1 tablespoon, perfect for a single glass of cola.
