Food Processor Uses in Indian Cooking: Which Blade Does Which Job?

Most food processor uses in Indian cooking come down to four parts. Each part does one kind of job.

• Chopping blade (S-blade): chops onion, tomato, garlic, ginger, and chilli. It also grinds chutney and nut butter.
• Dough blade: kneads atta for roti, paratha, and puri.
• Slicing disc: cuts even slices of potato, cucumber, and onion.
• Shredding disc: grates carrot, cabbage, and cheese.

The Bosch MultiTalent 3 sold in India is one example. Its Bosch spec sheet lists a universal knife, a plastic dough tool, slicing and shredding discs, a beating disc, and a grinding blade. Bosch lists more than 50 functions for it.

Is a food processor useful for Indian cooking? Yes, for chopping, kneading, slicing, and grating. How to Use a Food Processor Well

A few habits keep your work clean and your machine safe. Follow these tips.

Cut large items into chunks first. Use the pulse button for control. Do not overfill the bowl. Match the blade or disc to the task. Clean it right after use, before food dries on.

How Much Atta Can a Food Processor Knead? What the Manuals Say

A food processor kneads only as much flour as its manual allows. The Bosch MultiTalent 3 (800 W) takes up to 500 g of flour per batch, with a maximum of 0.8 kg of dough mixture, says the Bosch India spec sheet.

The Emerio food processor manual sets a lower limit. Its limit is 375 g of flour and 225 g of water. It says one kneading run should not go past 90 seconds, with 2 minutes of rest before the next run. It also says to switch off as soon as the dough forms a ball, and to add a little water if the motor slows.

Can a food processor crush ice? Only some models can. Bosch says the MultiTalent 3 is also suitable for crushing ice. The nutribullet food processor manual says that model is not meant to be an ice crusher, and that trying may damage the blades. Check your own manual first.

Can you put hot food in a food processor? Let it cool first. The Emerio manual warns that hot liquid can shoot out of the machine because of sudden steam. The nutribullet manual also says not to run the motor for more than one minute at a time, and to wait at least a minute before the next run.

What You Should Not Put in a Food Processor

Some things can crack the bowl or harm the motor. Avoid these.

• Hot liquids: sudden steam can push hot liquid out of the bowl and burn you. Let food cool first.
• Ice and very hard whole spices: some models can crush ice and some cannot. Check your manual, or use a mixer grinder jar.
• Long, heavy grinding: for this, use a mixer grinder instead.

Use the right tool for hard, dry grinding. That keeps your food processor working for years.
