You can replicate this at home: after the bread maker finishes the dough cycle, put the dough in the fridge overnight. Bake it the next day in an OTG at 200°C for 15 minutes. The flavour is dramatically better than same-day bread.

Method 1: Full Garlic Bread in the Bread Maker

Ingredients:

  • 350g maida
  • 5g instant yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary or mixed Italian herbs
  • 2.5 tbsp butter (softened)
  • 215ml warm water

Method:

  1. Add water and butter to the pan first.
  2. Add flour, salt, sugar (at opposite corners), then yeast.
  3. Add garlic and herbs on top of the flour.
  4. Select Basic program, Light crust.
  5. When done, remove and brush immediately with melted butter.

Result: A soft, aromatic loaf. Good for slicing and pairing with pasta or soup. Not the crispy Domino's style — for that, use Method 2.

Method 2: Dough Mode + OTG (Restaurant Style)

This gives you the crackly crust and chewy inside of proper garlic bread.

Step 1 — Make the dough in the bread maker:

  • 350g maida, 5g yeast, 1 tsp salt, 1 tbsp sugar, 1.5 tbsp oil, 220ml water
  • Select Dough-Only mode (no baking). Takes about 90 minutes.

Step 2 — Shape and bake:

  1. Remove dough and roll into a flat oval (like a thick pizza base).
  2. Mix 3 tbsp butter + 4 cloves minced garlic + 1 tsp herbs into a paste.
  3. Spread garlic butter over the dough.
  4. Fold the dough over (like a book). Press edges to seal.
  5. Let it rest on a baking tray for 20-30 minutes to rise again.
  6. Bake in OTG at 200°C for 15-18 minutes until golden.
  7. Remove, brush with more butter, slice and serve hot.

The Cold Fermentation Option

After Step 1, instead of shaping immediately, put the dough in an oiled bowl. Cover with cling film. Refrigerate overnight (8-24 hours).

The next day, take it out, let it warm to room temperature (30 minutes), then follow Step 2.

This one extra step makes a noticeable difference in flavour.
