What about metal pans? The guideline says "Small amounts of these materials that are likely to leach into food during cooking or storing need not be a cause of concern."

Will an Appam Pan Work on Induction?

Consumer Reports says the exceptions include "a few nonstick pieces that are made of aluminum, a material that won't work with induction stovetops".

CHOICE, a consumer group, says "Glass, aluminium and copper are not suitable." It also says to "look for the induction-compatible symbol when shopping".

Quick test: hold a fridge magnet to the base of the pan. If it sticks firmly, the pan will heat on induction.

How Healthy Is Appam?

Stat check: HealthifyMe lists one 60 g appam at 116.34 kcal, with 22.49 g carbs, 2.38 g protein and 1.88 g fat. Per 100 g, that is 193.91 kcal.

1. Warm the pan on low to medium heat. Never leave an empty non-stick pan on high.
2. Add a few drops of oil to each cup.
3. Fill each cup about three-quarters full, as the batter puffs up.
4. Cover with the lid so steam cooks the centre.
5. Turn each appe once the base is golden.
6. Let the pan cool, then wash it with a soft sponge.

Cast iron needs one extra step. Lodge, a cast iron maker, says to add "a very thin layer of cooking oil" and bake the pan, starting with: "Preheat your oven to 450-500°F."
