Air Fryer Bread: Soft Homemade Bread Without an Oven

Can You Actually Bake Bread in an Air Fryer?

Quick Answer: Yes, you can bake soft homemade bread in an air fryer. It works surprisingly well for small loaves. The key is lower temperature (160°C vs 180°C in an oven) and covering with foil to prevent the top from burning. You do not need an oven or OTG.

Baking air fryer bread at home is now possible even without an oven or OTG in your Indian kitchen.

Many Indian homes do not have an oven or OTG. But almost every modern kitchen has an air fryer now. The good news is that you can bake real bread in it — soft, fluffy bread with a golden crust.

The air fryer is basically a small convection oven. Hot air circulates inside a compact chamber. This makes it perfect for small loaves and rolls. The smaller space actually helps because the heat is more concentrated.

I will show you three bread recipes. A basic white bread from scratch, quick garlic bread, and cheese toast. All three work perfectly in any air fryer.

Basic White Bread Recipe

Quick Answer: Mix maida, yeast, sugar, salt, warm milk, and butter. Knead for 10 minutes. Let the dough rise for 1 hour. Shape, place in a 6-inch tin, let it rise again for 30 minutes. Bake at 160°C for 25-30 minutes with foil on top for the first 15 minutes.

Ingredients:

  • 2 cups maida (all-purpose flour)
  • 1 tsp instant yeast
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 3/4 cup warm milk (not hot — lukewarm)
  • 2 tbsp butter (melted)
  • Oil for greasing the tin

Method:

  1. Activate the yeast: Mix warm milk, sugar, and yeast in a bowl. Let it sit for 10 minutes. It should become frothy. If it does not froth, your yeast is dead — use a new packet.
  2. Make the dough: In a large bowl, mix maida and salt. Add the yeast mixture and melted butter. Knead for 10 minutes until the dough is smooth, soft, and slightly sticky. It should bounce back when you press it with your finger.
  3. First rise: Place the dough in a greased bowl. Cover with a damp cloth or cling wrap. Keep in a warm spot for 1 hour. The dough should double in size.
  4. Shape: Punch down the dough to release air. Shape into a log that fits your tin. Use a 6-inch round tin (the most common size that fits air fryers).
  5. Second rise: Place the shaped dough in the greased tin. Cover and let it rise for 30 minutes. It should rise to about 1 inch above the tin rim.
  6. Bake: Cover the tin tightly with aluminium foil. This prevents the top from burning. Place in the air fryer at 160°C for 15 minutes with the foil on.
  7. Remove foil: After 15 minutes, carefully remove the foil. Continue baking at 160°C for 10-15 more minutes until the top is golden brown.
  8. Check: Tap the bottom of the bread. If it sounds hollow, it is done. If it sounds dull, bake for 5 more minutes.
  9. Cool: Let the bread cool in the tin for 5 minutes. Then remove and cool on a wire rack for 15 minutes before slicing.

Why 160°C and not 180°C? The air fryer chamber is much smaller than an oven. The heating element is closer to the food. Higher temperature will burn the top before the inside is cooked. 160°C gives even cooking throughout.

Garlic Bread in 5 Minutes

Quick Answer: Slice bread, spread garlic butter (butter + minced garlic + parsley + salt), place in air fryer at 180°C for 5 minutes. The result is crispy on top and soft inside — better than microwave reheating.

This is the easiest air fryer bread recipe. You can use store-bought bread or the homemade bread from the recipe above.

Garlic butter:

  • 3 tbsp butter (softened, not melted)
  • 4-5 cloves garlic (finely minced)
  • 1 tbsp fresh parsley or coriander (chopped)
  • Pinch of salt
  • Optional: 1/4 tsp chilli flakes

Method:

  1. Mix all garlic butter ingredients together.
  2. Slice bread diagonally (about 1 inch thick). Spread garlic butter generously on each slice.
  3. Place in the air fryer basket in a single layer. Do not stack.
  4. Cook at 180°C for 4-5 minutes until the edges are golden and the butter is bubbling.
  5. Serve immediately while hot and crispy.

For cheesy garlic bread, add grated mozzarella on top of the garlic butter before air frying. The cheese melts and turns golden in about 5 minutes.

Cheese Toast in 4 Minutes

Quick Answer: Place bread slices in the air fryer. Top with cheese slices or grated cheese. Cook at 180°C for 4 minutes. The bread toasts and the cheese melts and bubbles. Faster and crispier than a toaster or microwave.

Method:

  1. Place bread slices directly on the air fryer basket.
  2. Top with cheese — processed cheese slices, grated mozzarella, or cheddar all work.
  3. Optional toppings: sliced tomato, oregano, chilli flakes, corn kernels.
  4. Cook at 180°C for 3-4 minutes. Watch carefully — cheese goes from melted to burnt quickly.

This is perfect for a quick breakfast or evening snack. Kids love it. The air fryer makes the bread crispy underneath while the cheese melts on top — something a toaster cannot do.

Key Tips for Air Fryer Bread

  • Use a 6-inch round tin: This is the ideal size for most air fryers (3.5L to 5.5L capacity). Larger tins may not fit.
  • Lower temperature than oven: Always reduce by 20°C from oven recipes. The air fryer chamber is smaller and heats faster.
  • Cover with foil first: The top of the bread is closest to the heating element. Without foil, it burns before the inside is cooked.
  • Do not open frequently: Every time you open the basket, you lose heat. Check only when necessary.
  • Warm spot for rising: In India, room temperature (28-35°C) is usually warm enough. In winter, place the dough near a warm stove or in the sun.

Troubleshooting Common Problems

Top burns but inside is raw: Temperature is too high. Reduce to 150°C and cover with foil for the entire baking time. Remove foil only for the last 5 minutes.

Bread is dense and heavy: The dough did not rise enough. Make sure your yeast is active (frothy after 10 minutes). Let the dough rise in a warm spot. In cold weather, rising takes 1.5-2 hours instead of 1 hour.

Bread sticks to the tin: Grease the tin generously with butter or oil. You can also line the bottom with parchment paper cut to size.

Uneven browning: The air fryer fan creates uneven airflow. Rotate the tin 180 degrees halfway through baking.

Bread collapses after baking: You overbaked the crust but underbaked the inside. The steam trapped inside collapses when the bread cools. Use the hollow-tap test to check doneness.

Frequently Asked Questions

Can I use whole wheat atta instead of maida?

Yes, but the bread will be denser and heavier. Whole wheat absorbs more water, so add an extra 2-3 tbsp of milk. The bread will not be as soft as maida bread but it is healthier.

What size tin fits in an air fryer?

A 6-inch round tin fits most air fryers with 3.5L or larger capacity. Measure your air fryer basket before buying a tin. Leave at least 1 cm gap around the tin for air circulation.

Can I make bread without yeast?

Yes. Use 1 tsp baking powder and 1/2 tsp baking soda instead of yeast. Add 2 tbsp curd for activation. Skip the rising steps. The bread will be more like a quick bread or soda bread — not as soft and fluffy as yeast bread.

How long does homemade air fryer bread last?

Store in an airtight container at room temperature for 2-3 days. In the fridge, it lasts 5-7 days. Homemade bread has no preservatives, so it goes stale faster than store-bought bread.

Why do I need to cover with foil?

The heating element in an air fryer is very close to the food. Without foil, the top of the bread gets direct intense heat and burns within 10 minutes. Foil protects the top while the inside bakes evenly.
